What is palkova, and what does it taste like?

Palkova is a milk sweet from Tamil Nadu in South India, made by simmering milk slowly until it thickens, so it tastes of cooked milk with a little caramel. Our icing is our take on that flavour, mixed from full cream milk powder and butter rather than cooked.

How sweet is it?

The icing is rich and milky, and the plain buttercake under it evens out each bite. The chocolate bites are made with cocoa and stay on the dark side. Have the palkova bites with masala chai or South Indian filter coffee, and the chocolate bites with black coffee.

What does it look like inside?

Under each rosette is a square of pale buttercake with no filling. The chocolate bites are chocolate cake all the way through, with a dark piped swirl on top.

How many bites are in the box?

64, in four blocks of 16: two of palkova buttercake, with orange and red rosettes, and two of Ultimate Chocolate. Each bite is about 1.1 inches square and 1.2 inches tall, so the box serves about 30 people at two bites each.
