What does sourdough actually do to a brownie?

It does the same job it does in bread. The starter ferments the batter, which builds a low sour note underneath the chocolate and stops the sweetness running away. The texture goes denser and fudgier than a standard brownie — closer to a truffle than a cake.

Is it halal?

Does it contain coffee?

Yes. There's dark roast coffee in the batter — it's there to deepen the chocolate rather than to taste of coffee, but it does mean the brownie contains caffeine. Worth knowing if you're serving it late or to kids.
