1. Inside every slice: Layers of chocolate jaconde sponge, soaked through with coffee syrup so it stays moist edge to edge, stacked with Biscoff caramel and a salted coffee mousse that leans more bitter than sweet, finished in a dark chocolate Rocher glaze that snaps when you cut into it.

It leans more bold and slightly bitter than sweet — espresso and dark chocolate take the lead, with the Biscoff caramel rounding things off.
